Jaggery comes from sap of toddy palm trees which are local to tropical environments, especially in central Myanmar.
The art of making jaggery lies in climbing very high toddy trees and tapping them to extract sap.
The collected translucent white sap syrup is then boiled to evaporation until it becomes golden brown and then made into bite-size pieces. -
